Wholesome Vegan Cucumber Sushi Rolls With Spicy Mayo

Serve these refreshing sushi-inspired rolls from the Dwell Eat Study weblog with soy sauce, pickled ginger, wasabi, or your favourite sushi toppings for added taste. 

What you want:

For the sushi rolls: 
2 cucumbers, minimize in half widthwise, seeds eliminated
1 cup sushi rice, cooked based on bundle directions 
½ agency avocado, sliced
¼ purple bell pepper, sliced
¼ orange bell pepper, sliced
¼ cup julienne minimize carrots
¼ cup sliced baked tofu

For the spicy mayo: 
3 tablespoons vegan mayonnaise
1 tablespoon sriracha

What you do:

  1. For the sushi rolls, into cucumber, spoon a small quantity of rice, then compress in direction of one aspect of cucumber tube. Insert a slice of avocado, just a few slices of pepper, just a few items of carrot, and some slices of tofu, add extra rice to fill gaps, compressing, and including extra rice till packed.
  2. With a pointy knife, slice cucumber into ½-inch thick items. 
  3. For the spicy mayo, in a small bowl, mix mayonnaise and sriracha and blend till nicely mixed. Serve cucumber slices and serve with spicy mayo.
